Sunny Side Up

Hey everyone,

I am totally obsessed with eggs at the moment. There are so many different things you can do with eggs; poach them, pan fry them, boil them, scramble them or make an omelette, you can make sauces with them and bake with them...basically, ANYTHING! :)

It is widely believed that poaching is hard to do but the fact is, it's actually quite simple. Here's how to do it:

My favourite breakfast
Poached egg with avocado

What you need:
1 tbsp clear vinegar
Boiling water to fill 3/4 of a pot
1-2 eggs
1 ripe avocado

How to:
Put the vinegar in the pot, boil the water in a kettle (It is just quicker)
Put the boiling water in the pot and keep the stove on mark 6 (of 9)
The important thing here is that the water shouldn't boil, not even simmer. It should be at the temperature just before the tiny bubbles occur.

Crack the egg carefully and put the raw egg slowly in the pot. Leave for 3-5 minutes. Once finished carefully pick it up with a spatula with wholes in it so the excess water drips down. The egg white should be shiny put just solid and the yolk should be runny.

While the egg is cooking, halve the avocado, mash the avocado if you like or cut it in half moon pieces. Top with the poached egg.
Garnish with some salt and pepper.

The first blog post

Hi Migraineurs! This is my first blog post to you guys. It has been long in the making as I have had to build up the confidence in writing this blog. The reason for this blog i to reach out to other migraineurs, as it is not just me suffering from migraines, it's you too. My hopes for this blog is to give support, inspiration and hopefully help someone improve their life, decreasing the migraines and maybe even help get rid of them. I am on a journey to find my "cure", I use the bunny ears here as some might believe there is no cure, I am not sure I believe there is a cure, BUT, I know there are things we can do to reduce them to the point where a migraine occur maybe once or twice a year. Being a person with migraines every week and headaches each and every day, I can't wait for that morning I wake up with no pain what so ever! Imagine that!! So follow this blog, follow my journey and hopefully we can share experiences, tips and support! xx Rebecca
